This Corn Salad is a bright and feel-good salad that’s loaded with kernel corn,  tomatos, black olive and the dressing gives it an amazing fresh flavor. This is a crowd-pleasing fresh corn salad that always disappears fast.

1. Kernel corn.
2. Tomato.
3. Black Olive.
4. Green Capsicum.
5. Salt.
6. White Pepper.
7. Olive Oil.
8. Lemon Juice.

This salad would make a beautiful presentation at your summertime get-togethers, or on your dinner table. It goes well with grilled options and balances out heavier main dishes. I think it would look cute as an appetizer, served in small glasses or ramekins.

It’s been so hot in Kansas City lately that I’ve fully embraced raw summer produce. I’m a big fan of raw sweet corn, but you could grill your corn first if you’d like some smoky flavor. This corn salad recipe is delicious either way.

Do I need to cook corn? No need! Corn kernels are good to eat raw and we avoided making this salad as easy as possible. If you want to cook your corn first, you can heat it with a little bata over the stove until it is lightly crunchy or boiled in water until smooth.
